Ingredients
  

  • 1 can chickpeas (rinsed & drained)
  • 1 ripe avocado (cubed)
  • 1/2 small red onion (thinly sliced)
  • 1 small cucumber (chopped)
  • Juice of 1/2 lemon
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Fresh parsley or cilantro (optional)

Method
 

  1. In a large bowl, combine chickpeas, avocado, cucumber, and red onion.
  2. Drizzle with lemon juice and olive oil.
  3. Season with salt, pepper, and fresh herbs.

Notes

Add a boiled egg or a handful of quinoa for extra protein
