Ingredients
  

  • 1 ripe avocado
  • 1 cup canned chickpeas (drained & rinsed)
  • 1 small carrot (grated)
  • ½ red bell pepper (sliced)
  • ¼ red onion (thinly sliced)
  • 2 whole grain or spinach wraps
  • Salt & pepper to taste
  • Fresh parsley (optional)
Tahini Drizzle:
  • 2 tbsp tahini
  • ½ Juice of lemon
  • 1 tbsp water
  • Pinch of cumin

Method
 

  1. In a bowl, mash avocado and chickpeas together until chunky-smooth. Season with salt and pepper.
  2. Mix tahini, lemon juice, water, and cumin in a small bowl until smooth.
  3. Lay out the wraps, spread the chickpea mixture, add veggies, and drizzle tahini sauce.
  4. Roll tightly, slice in half, and serve.

Notes

Add arugula or spinach for extra greens. Keeps well for lunchboxes
