Ingredients
  

  • 1/2 cup dry green or brown lentils
  • 1 tbsp olive oil
  • 1/2 onion (chopped)
  • 1 garlic clove (minced)
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 2 cups vegetable broth or water
  • 1/2 cup coconut milk
  • 2 cups fresh spinach (chopped)
  • Salt & pepper to taste
  • Optional: lemon juice for brightness

Method
 

  1. Heat olive oil in a pot. Add onion and garlic, cook until soft.
  2. Stir in cumin and turmeric. Add lentils and broth.
  3. Simmer for 20–25 minutes or until lentils are tender.
  4. Add spinach and coconut milk, cook 3–5 more minutes.
  5. Season with salt, pepper, and a squeeze of lemon (optional).

Notes

Can be served with rice, quinoa, or flatbread.
