Ingredients
  

  • 1 cup canned chickpeas (rinsed)
  • ½ cucumber (diced)
  • ½ red bell pepper (diced)
  • ¼ red onion (thinly sliced)
  • ⅓ cup black olives (halved)
  • ¼ cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp dried oregano
  • Salt & pepper to taste

Method
 

  1. Combine chickpeas, cucumber, pepper, onion, and olives in a large bowl.
  2. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Top with crumbled feta and serve chilled.
