Ingredients
  

  • 2 medium potatoes
  • 1/2 cup sliced mushrooms
  • 1 tbsp butter or olive oil
  • 1/2 cup shredded cheese
  • 2 tbsp sour cream
  • Salt & pepper

  1. Microwave potatoes until tender. Sauté mushrooms. Slice open potatoes, top with mushrooms, cheese, and sour cream.
