Ingredients
  

  • 2 red bell peppers (halved & deseeded)
  • 1 cup cooked quinoa
  • 1/4 cup diced tomato
  • 1 tbsp chopped parsley
  • 1/2 tsp garlic powder

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix quinoa with tomato, parsley, and spices.
  3. Stuff the peppers with the mixture.
  4. Place in a baking dish and bake for 20 minutes.
