Ingredients
  

  • 1 medium sweet potato (cooked & mashed)
  • 1/2 cup canned black beans (rinsed)
  • 1/2 tsp cumin
  • 2 large whole wheat tortillas
  • 1/2 cup shredded cheese (cheddar or vegan)

  1. Spread sweet potato, beans, spices, and cheese on one half of each tortilla. Fold and cook in a pan until golden.
