Ingredients
  

  • 1 medium sweet potato
  • 1/2 cup unsweetened plant-based yogurt
  • 1 tbsp almond butter
  • 1 tbsp chopped pecans
  • 1/2 banana, sliced
  • Sprinkle of cinnamon

Method
 

  1. Preheat oven to 200°C. Roast sweet potato whole for 25 min.
  2. Once soft, cut in half and scoop slightly.
  3. Fill with yogurt, banana, almond butter, and pecans.

You can prepare the potatoes in advance and stuff them in the morning.
