Ingredients
  

  • 1 medium sweet potato (cut lengthwise into 1/4” slices)
  • 1/4 cup hummus
  • 1/2 avocado (sliced)
  • Salt, pepper, chili flakes to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Roast sweet potato slices for 20 minutes, flipping halfway.
  3. Cool slightly, then spread with hummus and top with avocado.
  4. Season and serve warm or room temp.
