Ingredients
  

  • ½ cup red lentils
  • 1 tsp olive oil
  • ½ onion (diced)
  • 1 garlic clove (minced)
  • ½ tsp turmeric
  • ½ tsp cumin
  • 1 cup vegetable broth
  • ½ cup coconut milk
  • Salt to taste
  • Fresh cilantro (for garnish)

Method
 

  1. In a pot, sauté onion and garlic in oil for 3 minutes.
  2. Add spices and stir until fragrant.
  3. Add lentils, broth, and coconut milk. Bring to boil.
  4. Reduce heat and simmer for 20–25 minutes until thick.
  5. Garnish with cilantro and serve with rice.
